tuesday's dinner - another hit!

After yesterday's torrential rain in OKC, our power went out in the evening. Right when I was getting home from work, looking forward to being dry, we lose power. For 20 hours. This being 1 day after my 2 weeks worth grocery trip. (I'll never do that again. Can you imagine if all that food had spoiled?! I would've been pretty upset.) Nothing went bad, thankfully, so tonight we were able to go on with our lives. Homecooked meal. Game 6 Celtics/Lakers..the usual. Tonight's dinner got a "you're the second best cook I know". (Second to his mom. What southern boy isn't going to put his mom as #1?!)

Buttermilk Baked Chicken

Ingredients
4-6 chicken breasts (I used boneless, skinless. If you don't, rotate the chicken half way through cooking time.)
3/4 c flour
1 1/2 c buttermilk, divided
1 can cream of mushroom soup
1/4 c butter (This seemed like a lot to me. If you use a 13x9 pan, you may need this much. I used a smaller dish, so this was a lot of butter in the bottom.

salt & pepper
thyme

Directions
1. Heat the oven to 425. Melt butter in a lightly greased pan and then add thyme and mushrooms.
2. Coat chicken in 1/2 c buttermilk, sprinkle with spices and dredge in the flour. Add to pan and bake for 35 minutes.
3. Mix soup with 1 c buttermilk and add to pan. Lightly cover with foil and cook for another 10 minutes.

Easy and good. Can't beat it!
